Coriander is a lovely spice that adds sharp and bright flavors to many hot foods and is especially popular in Indian cooking. These whole seeds are harvested in summer and fall; dried; then winnowed and screened to remove as much debris as possible before cold storage. Whole coriander retains its flavor longer than the pre-ground spice. It can be cracked with a mortar and pestle; ground in a pepper-grinder; or chopped in a small food processor before adding to your favorite dish.
